Warm Plates, Healthy Hearts: Winter Meals for Seniors
As the daylight fades and a winter chill settles in over our cozy New England town, few things feel as warm and comforting as a homemade meal. For seniors, comforting foods aren’t just about the yummy taste, they can also be a great source of nourishment, hydration and energy during the colder winter months. When the cold settles in, it’s easy to put off cooking, but a warm meal can make all the difference.
As we age our bodies may need a little extra support to stay strong and healthy. It can also become harder to get all the vitamins and nutrients we need each day, especially during the colder months when appetites and activity levels often decrease. Warm dishes such as soups, stews, and casseroles are wonderful choices. They are easy to chew, full of those nutrients we all need and help keep the body warm from the inside out. Plus, they can be prepared in batches and frozen, to make life a little bit easier!
One of our favorite wintertime recipes is a Hearty Chicken and Veggie Stew, which is balanced, flavorful, and packed with everything you need.
Ingredients:
- 1 lb. boneless, skinless chicken breast (cut into small pieces)
- 2 carrots, 2 celery sticks, and 1 small onion (chopped)
- 2 cups of diced potatoes or sweet potatoes
- 1 cup green beans or peas
- 4 cups of low-sodium chicken broth
- 1 tbsp of olive oil
- 1 tsp garlic, ½ tsp thyme, salt & pepper to taste
Instructions:
- In a large pot, heat olive oil and sauté onion, carrots, and celery for 5 minutes.
- Add your chicken and cook until lightly browned.
- Stir in potatoes, broth, and seasonings. Bring to a boil, then simmer for 25–30 minutes.
- Add green beans or peas during the last 5 minutes of cooking.
