Ingredients
For the Salad:
Majanna’s Raspberry Vinaigrette (available at Mettawa’s Station)
5 oz baby greens (spring mix, baby spinach, or arugula)
1/4 cup toasted sliced almonds or pecans (for crunch)
1/4 cup fresh raspberries (whole)
1/4 cup white chocolate shavings (use a high-quality bar)
Optional: Thinly sliced shallots for a savory bite
Prep the Chocolate: Use a vegetable peeler to shave a cold white chocolate bar into long, delicate curls. Keeping the chocolate in the fridge until the last moment makes it easier to shave without it melting in your hands.
Assemble: Toss the baby greens in a large bowl with just enough dressing to lightly coat the leaves.
Garnish: Divide the greens onto plates. Top with the whole raspberries and toasted nuts.
The Finishing Touch: Sprinkle the white chocolate shavings generously over the top right before serving.
Flavour Pairing Tips
Why it works: The white chocolate acts similarly to a mild, creamy cheese (like Chevre). If you want to lean further into the “savoury-sweet” profile, add a tiny pinch of sea salt directly onto the chocolate shavings.
