Red, White and Blue Tiramisu

This festive Tiramisu is a beautiful addition to your July picnics, backyard barbecues, and summer celebrations.

Ingredients

  • 16 oz mascarpone cheese, room temperature
  • ¼ cup powdered sugar, sifted
  • 2 (8 oz) containers whipped topping, thawed
  • 1 package ladyfingers
  • 2 cups orange juice
  • ¼ cup blueberry preserves
  • ¼ cup strawberry preserves
  • 1 pint blueberries
  • 1 pint strawberries, hulled and sliced

Directions

1. Make the Cream Filling: In a large bowl, beat the mascarpone cheese and powdered sugar for about 1 minute, or until smooth. On the lowest mixer setting, blend in one container of whipped topping. Gently fold in the second container with a spatula until fully combined.

2. Build the First Layer: Pour the orange juice into a shallow bowl. Dip each ladyfinger briefly into the juice, one at a time, then arrange them in a single layer in the bottom of a 9 x 13 dish. Spread half of the cream mixture evenly over the ladyfingers. Spoon small dollops of both blueberry and strawberry preserves across the top and gently smooth. Sprinkle with a handful of blueberries and sliced strawberries.

3. Repeat the Layers: Add a second layer of dipped ladyfingers, pressing gently into place over the berries. Spread the remaining cream mixture evenly on top. Finish with the remaining strawberries and blueberries arranged as desired. Cover tightly with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

4. Serve & Enjoy: Remove from the refrigerator just before serving and enjoy this festive summer dessert!
