Ingredients
- 2 extra-large organic peaches, sliced into wedges (about 4 cups)
- 1 tsp salt
- ¼ cup sugar
- 1 Tbsp butter, cubed and frozen
- 1 sheet puff pastry, thawed
- 1 egg, whisked
- 1 Tbsp turbinado sugar (Sugar in the Raw®)
- 1 tsp flaky sea salt
- Vanilla ice cream, optional
Directions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Toss peach slices with salt and sugar; let sit for 5 minutes.
3. Arrange peaches in overlapping circles on the puff pastry, leaving a 1½-inch border.
4. Fold pastry edges over the peaches to create a rustic galette.
5. Brush pastry with egg, then sprinkle with turbinado sugar and flaky sea salt.
6. Scatter butter cubes over the peaches.
7. Bake for 30–35 minutes, or until golden brown.
8. Serve warm, topped with vanilla ice cream if desired.
Tip: A drizzle of honey or a sprinkle of cinnamon makes a delicious finishing touch.
