A Night of Local Flavor: Red Horse and Sea Bright Wines Host an Unforgettable Pairing

Rumson diners enjoyed a memorable evening on November 12th as Red Horse by David Burke partnered with Sea Bright Wines for a multi-course wine-pairing dinner that highlighted local community and standout small-batch California wines.

Guests began the night with Basque-style pinxtos—fig and serrano ham with thyme-scented honey, seared tuna with peppadew and avocado, and bresaola with parmesan and arugula. The first course was paired with Sea Bright’s double-gold-winning Rumson Red Blend, a Malbec–Alicante Bouschet wine known for its notes of blackberry, licorice, dark chocolate, and wild herbs.

A pan-seared duck breast with star anise, red-wine-poached plums, and butternut-squash risotto followed, paired with the Petit-Cab Blend of Petit Verdot and Cabernet Sauvignon. This platinum-medal wine impressed guests with its bold structure and violet aromatics.

For the third course, Chef David Burke’s team served roasted New York strip loin with lobster béarnaise and truffle-whipped potatoes. It was matched with the Merlot–Verdot Blend, a double-gold winner celebrated for its full-bodied, earthy profile and smooth finish.

Chef Stuart’s Chocolate Decadence closed out the evening alongside Sea Bright’s Syrah, a medium-bodied wine with bright acidity and notes of red fruit and chocolate.

The open-seating layout encouraged guests to mingle, share tasting notes, and connect with fellow food and wine enthusiasts—capturing the welcoming spirit both Red Horse and Sea Bright Wines aim to bring to the community.
