If you’re looking to reduce carbs but love good comfort food, this garlicky, buttery, perfectly seared steak paired with silky cauliflower mash is the ultimate cozy meal—rich, satisfying, and weeknight-friendly. You get all the steak-and-mashed-potatoes vibes, but with fewer carbs and a lighter feel. It’s delicious, comforting, and ready in about 30 minutes.
Ingredients
- 2 New York strip steaks, cut into 1½-inch pieces (about 12 ounces each)
- 1½ tablespoons garlic butter seasoning
- 2 medium heads cauliflower, cut into florets
- ¼ cup unsweetened oat milk
- 4 tablespoons unsalted butter, softened, divided
- Chopped fresh Italian parsley for garnish (optional)
Directions
1. In a large bowl, toss steak pieces with garlic butter seasoning. Cover and let stand 15 minutes.
2. In a large saucepan, heat cauliflower and enough salted water to cover by about 2 inches. Bring to a boil over high heat; reduce heat to medium and simmer 12 minutes or until cauliflower is fork-tender. Drain and transfer cauliflower to a food processor.
3. Add oat milk, 2 tablespoons butter, and ½ teaspoon salt to the food processor. Purée 1 minute or until smooth. (Makes about 5 cups of mash.)
4. In a large skillet, melt remaining 2 tablespoons butter over medium-high heat. Add steak; cook and stir 3 minutes or until browned and internal temperature reaches 135°F for medium-rare.
5. Serve steak bites over cauliflower mash. Drizzle with pan drippings and garnish with parsley, if desired.
