Grilled Chicken Goddess Salad
It’s June—aka grilling season! Looking for a quick way to use leftover grilled chicken? Try this 5-minute Jersey-inspired salad with fresh tomato, corn, and creamy goddess dressing!
Ingredients
- 6–8 cups romaine or butter lettuce (Bowl & Basket pre-prepped)
- 1 red onion, chopped
- 2 zucchini, chopped
- 1 pint cherry tomatoes, halved
- 2 ears corn, shucked
- 2 cups grilled chicken, sliced or chopped
- Green Goddess dressing, to taste
Directions
- (Optional) Sauté onion, zucchini, and corn in olive oil for 3–5 minutes; let cool.
- Toss all ingredients with dressing and serve.
Blueberry Lemonade Spritz Cocktail (or Mocktail)
This light, citrusy spritz comes together in minutes with fresh blueberries and a hint of sweetness—perfect for warm evenings or easy entertaining.
Ingredients
- 1 can Polar Seltzer’ade Blueberry Lemonade
- ½ cup fresh blueberries
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 3 oz vodka
- Mint leaves
- Ice
- Lemon wedge, for garnish
Directions
- Fill a glass with ice and add fresh blueberries.
- Pour in vodka, lemon juice, and honey; stir gently to combine.
- Top with Polar Seltzer’ade Blueberry Lemonade.
- Garnish with a lemon wedge and mint leaves. Serve immediately.
