The Host’s Guide to the Perfect Tailgate Spread

Football season is here, and in Texas, game day is about much more than what happens on the field. It’s about gathering your favorite people, representing your team and, of course, putting together a spread worth showing up early for.

Whether you’re setting up outside the stadium, hosting a backyard watch party or gathering everyone around the TV, the best tailgate menus have one thing in common: variety without making things complicated.

At Southern Ice Co., we know a thing or two about feeding a crowd. Here’s our playbook for building a winning game-day spread.

Start With Handheld Favorites

When it comes to tailgating, convenience is key. Guests should be able to grab something delicious without missing the next big play.

Build the heart of your menu around handheld entrées such as sliders, sandwiches, wraps, tacos or chicken tenders. These options are easy to serve, easy to eat and simple to prepare in larger quantities.

For bigger groups, consider offering two entrée choices so there’s something for everyone. Pair a classic crowd favorite with something a little unexpected to keep the spread interesting.

Don’t Underestimate the Appetizers

A good tailgate starts long before kickoff, which makes appetizers essential.

Wings, pretzel bites, loaded nachos and other shareable appetizers allow guests to snack as they arrive without filling their plates with a full meal right away.

The trick is choosing foods that can sit comfortably on a buffet and still taste great throughout the party.

Bring on the Dips

If there’s one category that belongs at practically every football party, it’s dips.

Queso, salsa, spinach dip, buffalo chicken dip and other warm or cold favorites are easy to share and even easier to customize.

Serve several dips alongside tortilla chips, crackers, bread and fresh vegetables. It adds variety to your table without requiring another full entrée.

Add Something Fresh

Game-day food tends to be rich, cheesy and delicious—which is exactly why adding a few lighter options can make the entire spread better.

A colorful vegetable tray with ranch or another creamy dip is an easy addition. Fresh fruit, salads, pickled vegetables and other lighter sides can also provide a welcome contrast to heavier appetizers and entrées.

You don’t need half the table devoted to vegetables, but having something fresh gives guests more options and creates a more balanced menu.

Finish With Something Sweet

Every winning lineup needs a strong finish.

For tailgates, skip desserts that require complicated plating and choose options guests can grab with one hand. Cookies, brownies, bars, cupcakes and other individual desserts are perfect for passing around during halftime.

For an extra game-day touch, incorporate your team’s colors into icing, sprinkles or decorations.

Choose Foods That Travel Well

If you’re taking your tailgate on the road, the best menu isn’t necessarily the fanciest—it’s the one that still tastes great when you arrive.

Choose foods that can be prepared ahead of time, transported easily and reheated without losing their quality. Keep hot foods hot and cold foods properly chilled during transportation and service.

Disposable pans, insulated carriers, coolers and clearly labeled serving containers can make setup much easier once you reach your destination.

And remember: the less assembly required when you arrive, the sooner you can start enjoying the party.

The Winning Tailgate Formula

You don’t need dozens of dishes to create an impressive spread. Start with a few handheld entrées, add two or three appetizers, include dips and something fresh, then finish with an easy dessert.

Most importantly, choose foods that let you enjoy the game, too.

Hosting shouldn’t mean spending the entire first quarter in the kitchen.
